antifreeze/coolant problem

Two things
For the coolant level to drop that low means a leak.
And that has occurred and let the coolant disappear since it was last checked.
You will know the latter time period.
If a long time, could be a small leak.
If regularly checked, a bigger one.

That you say fluid escapes from expansion cap and that this happens when heater gets hot, ie when thermostat opens, leads me to suspect either sticky thermostat letting it overheat or expansion cap.

I'd change the cap first but would also be checking for any signs of a leak.... may not be wet, may be simply discoloured where coolant has passed over and dried.
I'd also find the bleed caps and bleed the system when topping up to ensure no air trapped in system.
Trapped air can cause chaos.
